Good job taking the plunge, but you have WAAAY too much headspace in your jars. You should have filled them up to within half an inch of the top. (Some recipes require an inch. Always follow your instructions.)

I would suggest investing in some half pint jars for the next time, if you're concerned about having too much jam when you open a jar.

Thanks! I know. I figured that out about the headspace when it was too late. I'm planning to get some smaller jars. Errors help us learn.

Will having too much headspace affect the quality of the product or how long it can be stored? If so I will go ahead and use those jars now so they aren't wasted.

It could. Depending on how long the jars are stored you COULD lose the seals and it will get moldy or the jam could fade prematurely from oxygenation, turning it dull and ugly looking.

If it was me, I'd use it up quick to top cheesecake or fill a layer cake, just so it didn't get the chance.

Good work! I'll make some raspberry jam one of these days. I've got bags of berries the kids picked over the summer, waiting for me in the freezer.

Thanks! I had a huge bag of frozen blueberries and wanted to make room in my freeze which is why I canned these!

Now I have to figure out if I can do the same with cherries. Though I'm not sure cherry jam would be good. I have found a recipe for turning them into cherry pie filling so I will probably do that.

Cherry jam is delicious. This recipe from Ball looks ridiculously good, but I haven't tried it yet.

If you do pie filling be sure to use Clear Jel or other canning starch and not regular cornstarch. Amazon carries it, if you can't source it locally, and it's very versatile, once you start deep diving into both sweet and savory pie fillings and other sauces.

Are they pie cherries (sour) or sweet, eating cherries? I've never had cherry jam, but I don't see any reason why it wouldn't be good. I've canned cherry pie filling before, but pitting all those little pie cherries was a massive pain. My husband was so sad when our little pie cherry tree got sick and died, but I was secretly relieved!

They are eating cherries. They were given to me dehydrated in bulk. I found directions to rehydrate them then froze portions. My plans were to make cherry fluff but I’ve not gotten around to it. Wanted to free up freezer space so I’m checking into canning them somehow.

I've never done it, but my mom's been known to puree fruit, spread it out on silicone mats and dry it to make fruit leather - so that's another possible use.

eh, if my daughter was here in the states I would do that. She loves fruit rollups so that would be right up her alley.

I'm just going to stick with jams and pie fillings. The pie filling can be used to top ice cream or cheesecake too!

yes. are they not the same? I've honestly never heard of fruit leather and assumed it was something similar to fruit rollups. <shrug>

According to this consumer food safety article about fruit leather it is, indeed, similar to fruit roll up.

They are very much like the commercial fruit roll ups and dried fruit sheets, but with less sugar and a truer taste of fruit.
